Katara had multiple advantages in that fight. Durring the first part of the battle it was at night durring a full moon, which is when a Waterbenders powers are at their absolute strongest. Also, she was in her native terrain. She was free to bend absolutly everything around her, the snow on the ground, the ice on the walls, the water in the pond.
Once the sun rose and Zuko's powers were increased and Katara's decreased he was able to win quickly thanks to the tree, though he probably could of still won without it. His attacks now had the power they needed to punch through her defenses.

Because it changed from night to day back to night quite quickly for the north pole because if the planet is on an axis it shouldve had a 6 month night or something like that. |
I've wondered that too. Plus whose Summer is Aang meant to have learnt all the elements by and defeat the fire lord? As in the Boy in the Iceberg, Sokka says something about too much midnight sun. Surely that means that the Southern hemisphere, which seems to include the Fire Nation, is having it's Summer right there and then.
