Well if you want to get technical, if you were a firebender, there's like a .0001% chance of ever learning how to lightningbend or that it even exists(It seemed like noone knew people could do that when they first saw Azula).
But as a whole element I think sandbending is really cool because of it's versatlity. You could use to block and offensively strike at the same time.
I wish they would've explored sandbending more, it was so awesome.
I think the reason Bryan Konietzko and Michael Dante DiMartino only created the bending arts to be within the four elements, is because, logically, more people believe in there being FOUR elements than anything else... Scientifically speaking, we KNOW that there are four elements but we are not sure, whether Aether exists or not... Many people have a disbelief of there being more than four elements, and they are the traditional, classical and more known elements... I think they were just trying to be realistic.

That same principle with the lightning could be applied to bloodbending and metal-bending too. Possibly even healing - in 116, Jeong Jeong did say that healing was a gift of the "Great benders of the Water Tribe", which would imply that it is not such a common gift.
IMO,Fire. You can make stuff with fire,despite what some believe >_>.
Example,Fire is a great thing to be able to bend if your cooking.
