Top 1 reason why Zutara will always be a possibility until the creators say it's not a possibility: The creators can do whatever they want.
They hinted at Zuko turning good all season 2, and at the end threw a curve ball our way. They have complete creative control over what happens in the Avatarverse. They have hinted that Toph has a crush on Sokka, yet we have no clue what will happen there. Midway through the season 1 finale I'm sure all of us though Sokka and Princess Yue were a sinch (sp?), but look what happened there.
As for Zutara not happening, the thing that most people don't understand is that even most Zutarians don't think it will actually happen. That's why M&B joked about the ship itself, because I don't think they expected such a huge following for it. We just like the idea of the ship better. It's easier to relate to thanKataang. Kataang is truly geared towards the younger audience because personally, I think it's gross lol. He's a child still. That's personal opinion though, and not meant to de-rail the topic at hand.

Example, Katara looks back at Zuko as she is led out of the cave where she nearly healed his scar, effectively completely forgiving the villian who has chased them for 2 seasons. Katara pats Aang on the head and says "He's a sweet little guy" in season 1. See? It's easy. Is there more 'evidence' for Kataang? Yes. But it's meaningless until it actually happens.
Example, do people REALLY think Zuko and Mai will remain a couple as they are now? After Mai made it clear that Azula's wishes are more important than Zuko's in this last episode, I no longer feel sorry for her and her dark attitude. She isn't worthy of the Zuko anymore. She will need to change if Zuko does, which we all know he will.
