It's because that actually wasn't Azula back when they made that title sequence. Back then, the female firebender was just a random design that they came up with to put in the title. After some consideration, they eventually decided to make use of that design for Azula. At that point they decided that her firebending was blue. It probably would have seemed very strange had they decided to change such a minor detail, so they left it the way it was. In any case, Azula can bend regular fire, as seen in "Zuko Alone".

if shes a "master firebender" and thats why her fire is blue...than she would have to master it over time...she wasnt born a master...she had to practice. so she probably became a master at like 10-14....ya know? and what i dont understand is why she is a master firebender and ozai isnt....i dont get it

Nah I don't think her fire is blue because she is a master firebender because Iroh, Jeong- Jeong and Ozai would all be considered master firebender and they bend normal fire. A reason why Azula's fire is blue could be because she is a prodigy or for the simple fact that the writers wanted to give Azula an unique ability to make her stand out.

it was regular fire....red/orange

So here we can see fire in the back ground of Azulon is indeed orange/yellow that of normal fire but in the episode into the inferno we see the fire around Azula is blue. So that brings the theory of blue fire for prodigy into question...
