let's look at things from the other side
who they have to fall back on in case "with Katara" doesn't work(talking realistically, not pure speculation)
Zuko
Mai- strong
Jin- possible, but became weak with the start of Maizu(that is way the creators call it)
Song- improbable
Ty- improbable, but some people think because her trying to give hints to Zuko about what to do about Mai, it meant she liked him
Aang
meng???- she accepted that Aang doesn't return her feelings
Toph???- she seems taken with Sokka, not Aang
???????
Aang doesn't have anything strong besides Katara, is unlikely(as shown so far)that they would put Katara with Zuko and leave Aang and Mai in limbo unless both either find someone else or die
and if Aang dies so soon, than someone that IS NOT Katara's child or one of her descendants would be the next avatar
