I think it's more of him growing up rather than being OOC or anything. It's not like Freddie is OOC because the writers gradually wrote away his stalker-ish habits towards Carly...he's just growing up. I think it's the same way for Gibby. I just don't like it as much. 
I think ever since he's been a series regular he's more of a "real person" instead of just a "Gibby". The fact that he isn't as strange is him becoming more mature. I guess strange and obscure things can be predictable and overdone(cough Lady Gaga cough coughhhh) but like you said, when it's in small doses like how Gibby used to be, it's not.
