Damn, you have bested my argument. :p Seriously, though, it was to show how Katara acted when she loved someone and that she's willing to forgive.
Not me. Finale will settle everything unless Mike and Bryan pull a really lame conclusion that doesn't answer the "Who will Katara end up with" question. If such is the case, I'll pull out because it won't be worth arguing.

Actually, according to Spacerac, that wasn't Mike and Bryan. It was one of the assistant writers or something.

Whether Katara's disgusted by it at first, resentful that he'd kiss her like that without her permission, or just surprised by it, her first moments look like she doesn't like it. However, in the next few, she leans into it, as if her brain is telling her "This guy is 'the one', remember?" So, she accepts it, hoping to find that tingling spark-filled sensation that one gets when they kiss that special someone.
Alas, Aang pulls away and Katara is still there, waiting to feel that "this is the one" feeling. It's only after she opens her eyes does she realize that the feeling never came and she figures out that he's not the one. She then has her blush and look away scene, showing a conflict inside of her mind. Her brain is telling her that Aang is the one she thought she wanted and, by all logic, he's a good choice. However, her emotions are telling her that she doesn't love him and that there was nothing there.
Thus, before what she thinks is the final battle, Katara has the emotional burden on her shoulders of telling the nice guy that she's led on that they're only going to be friends.
In summary: In 301-310, Katara was considering Aang, 310 and on, she's not.
