Also, the turtle didn't "reveal" himself to Aang, Aang had to 1. swim onto him, 2. spend (2?) days just wondering what he was doing, and 3. swim around to find its head.

I really don't agree. One of Avatar's hallmarks is that all their battles take place in real time, and in the real world, few fights last over 15 minutes. In fact, Aang vs. Ozai was far and away the longest fight in the entire show; it was the only one that lasted two episodes.
Katara vs Azula was in many ways unique; Katara was the only one of the Gaang that had to fight someone that was far more powerful than her, which really makes her victory that much more of an accomplishmeant.
And need I remind you that if Katara hadn't gotten her shot, she would have just stood their doing nothing for the entire finalie?!
