Actually, you're right. That was one of the contradictions I found in the show.
I don't know how to explain that really. the speculation would be trivial, but maybe there's a way of purifying teh white jade. :
Even as a "Tea guy" I couldn't give you a straight answer.
Here's another "Tea" trait of Iroh: tea knowledge: Not just the plants, but the plants around the plants themselves.
To answer your question, kingofspades, I did some thinking and came up with a brilliant answer, worthy for my title at the refuge:
In Iroh's cell, Ming offered him White Jade Tea.
Upon hearing this, I was like, "WTH? That's supposed to be poisonous, right?"
Then I went back to "The Avatar State" Book 2 vol one and remembered Iroh's scene with the berries.
The pakui berries heal the poison of the white jade.
Also, Ming said to Iroh in his cell, "I Know how you like RARE teas."
This being said, the white jade is easy to find, but difficult to make into a tea.
It's apparent sibling, the Dragon lily, takes on a similar appearance. Therefore, it can be assumed that both plants are in the same category of tea and flavor. It's just that the harder it is to find one, the easier it is to make it into tea.
So, The "White Jade Tea" (specutively) was made by blending the pakui berries with the white jade plant, neutralizing the poison, and creating a healthy green tea drink.
Am I awesome or what? I may have over-analyzed the situation, but my theory stands strong. What do you think?

I got my title several ways, but the best way was when I was the first to answer a trivia question concerning this subject in an online chatroom.
I answered, "White Jade Tea."

What do you think of the Genmaicha? The rice and popcorn green tea? It kind of has an awkward flavor.
