Iroh's tea skills come probably come from a lot of experience.
Here are several inferences I made: In "zuko alone" Azula mentioned Iroh as a "Tea loving Cookyness".
At that time, Iroh was probabl;y simply enjoying the tea itself, and focused more on the war. But it is also in Zuko Alone when we discover that Iroh lost his son luten. That is probably when he embraced the idea of tea, which always comforted him. He learned on his own what kind of teas there were to be made, and experimented. Later on, as he got older, he noticed the corelatoin betweeen wisdome and tea. both come with old age. When a tea leaf is aged right, such as a jasmine leaf and a green tea leaf, they are just the right flavor, which is a non-stagnant, lightly flavored body of tea, with a hint of fragrance.
Essentialy, he applied the idea to many other teas and became a tea master. Also, noticing the difference in the taste of other people teas would've given him a better Idea of what NOT to do when making tea as well.
So, in conclusion, Iroh is said to be a tea master, most likely, just because he has tried a ton of tea in his lifetime, acquirng the skills to make what we will never have the opportunity to taste: the best tea in Ba Sing Se.

In the Fire Nation, Iroh always loved to be calm. After he tried tea, he began his siege of Ba Sing Se. After he retreated, Iroh began studying herbs.

Ahhh...good observation.
Well, in that case, you should remember that Iroh hasn't been in the fire nation since zuko was banished. also, he doesn't carry his "recipes" with him. He had no belongings when he entered ba sing se. NTM, Iroh's tea skills were never brought to light, so we have to make these inferences to understand and enjoy this understanding that we have of Iroh and his tea.
Also, we can assume, off topically however, that the tea ozai was drinking was merely calming tea, likely black or Chammomile.
I could go for some right now, but I have none.
But, no, that probably had nothing to do with Iroh. It's also insignificant to the conversation of Iroh's tea skills.
Apparently, everyone just wants to believe he's naturally talented, which defeats the purpose of this thread. This thread was not merely meant to assume dull observations, but to speculate those observations that you have made to make them sharper and more clear to see. In a sense, you can say that theory that Iroh is naturally talented, and my theory that he is experienced as well, are all part of the same theory, because in a sense, the topic we are discussing is connected by it's roots: the subject of tea.
However, I must protest against "Ozai's Tea" because it is a poor speculation and trivial matter.
