We've already seen "sand"-benders, who are earthbenders who seem to incorporate waterbending forms (it was clearly noticeable to me in "The Library"). The closest thing to "metal"-benders are the firebenders, who use metal in their weapons and seem to use it in domestic construction (as seen in the construction projects of "Return to Omashu") as well.
Azula has proven that Ligthning bending is a very refined form of fire bending. Since metal is nothing more than very refined minerals (that is, earth) is not ludicrous to think that maybe is possible for an earth bender to metal bend. I also think Ligthning bendinding can do a lot more than throw a single ligtning, but no firebender has managed to do it yet. Maybe Iroh could have had if his interest in firebending wasn't second to tea and Pai-sho.
Also,??I think that the reason bending has passed from being learnt of animals to genetics is simple evolution. Like so:
People learn bending, they try different bendings, some are better at some bending than other and stick to it. With the years the hang around mostly with people of same bending interest and the better ones are more popular and tend to marry and have children. With generations passed they specialize more and more and lose the ability to do more than one element.
And so on.
Just a theory.
