Katara just became a better bender, I say her character has shrunk, not grown.
Sokka, though not a chavinist, is even more of the comic relief than ever. He's more witty and more of a warrior, but as a character, he hasn't really developed.
Toph hasn't appeared enough to really say. But she has become more friendly and was seen as guilty and upset with not being able to save Appa. In "Bitter Work" we got a better view into her mind and saw her sleeping with the others.
Zuko, definitely. He's more patient and humble, and more of a hero now. Perhaps more aangsty, but Zuko's defintely grown the most.
