Zuko. If Aang never learned firebending, he would have never been able to beat Ozai. Plus, in the first season he gave Aang fighting experience and bending practice
It's hard to say. First off though, I think we can eliminate Toph and Zuko from the list. As helpful as they were, they really didn't do anything for Aang other than teach him how to bend their elements. as for the others, here's how I see what they did for Aang:
Katara:
She was Aang's drive. Everything Aang was doing, he was doing for Katara. That's pretty important. She also played a huge role in helping Aang through his emotional toil when Appa went missing. That's pretty signifigant.
The Monks:
They provided the teachings and lifestyle that make Aang who he is. His entire character is based upon what they taught him. The Monks teachings were definitely essential.
The Lion Turtle:
Helped Aang see that there was a way for him to restore balance to the world without sacrificing his principles. For this, I think the Lion Turtle deserves a special mention - while some may disagree with me, I think that sparing Ozai was the most defining moment of Aang's character in the entire series.
I think that someone else who should be mentioned is Roku. He was a tremendous help throughout the series. Another person who's been left out is the Guru Pahtik. Granted, it took Aang a while to open up the 7th Chakra, but without the Guru, Aang would never even have gotten that far.
Does it matter?
All of the masters played a huge role in Aang's development as an avatar.
One master was not more beneficial to Aang's success then another master was, they all contributed the same.

i think the person who doesnt get enough credit is azula. sure she hated aang and tried to kill him, but if aang had never met her, aang wouldnt nearly have had the amout of practice in fighting which would have made him easier to defeat for the fire lord. azula was aangs master in fights since she was the only bender who really gave aang a challenge and made aang fight for his life harder |

Bluefiremaster: if this is your way of scoring points for the ACC, it's not working. There is a time and place for worshipping Azula, and this is neither.
