Aang decapitates Zuko, boils the head in a pot to strip the flesh away, gouges out to eyeballs, cuts out the tongue and removes the brain matter. Then he splits the skull in two, makes a bowl out of one half.
He then slits Zuko's body open, removes his entrails and piles them in the skull bowl, which he then meditates upon.
