Because Mai wouldn't have learned "the real Zuko" after dating him while he was in the Fire Nation and NOW that she actually talked to him in the prison cell. She OBVIOUSLY knows the real Zuko now and SUPPORTS him because she just saved his life...
Of course there will be more Zutara fanfics than Kataang. You just have to watch the show to get some nice Kataang moments, Zutara's have to think up fantasies.
Did anyone see the Zucest go on in the Boiling Rock?

Plus, Zuko and Katara have been at odds for most of the series. This could be the start. THE START!
Zutara is better because it's the only ship that isn't forced onto anyone.
Kataang is Katara being forced to give into Aang's crush because of a prophecy, the fact that Aang's the avatar, and because they're good friends.
Maiko is another status quo ship. Just because they've known eachother a while doesn't mean it'll happen.
Yukka is yet another example.
On the other hand, ships like Zutara and George are ships where the parties actually chose the relationship on their own, even if they hate eachother at first.
