That's true, that could be what it is. But it's not just her age that turns me thinking differently. Toph has a different ambience than Katara, she is not careful minded like Katara is. She is not going to unembarassedly walk over to Aang and move his arms around a little so he gets the right stance. I don't know, we'll have to wait until tonight to see how her earthbending teaching goes.
As for the Azula thing, I was thinking... (which is always dangerous!)
Okay now keep in mind I openly admit that there is a microscopic chance that will happen. I do not in any way know that this will happen, it's just a theory and it has a large chance of being false. I believe that I am theorizing about this prematurely. I believe that tonight we discover that Toph is not the ideal earthbending teacher we thought she was, so the kids go to Ba Seng Sei in the finale to find a master. The finale will be "The Seige of Ba Seng Sei". In this Azula knows a weak spot in the wall from Iroh, but no one will listen; they had direct orders from Ozai to attack from the front. In the middle of Book 3: Fire, Azula gets word of Aang's mastering of Earth. (Perhaps Toph was also taught how to be a better teacher there.) She realizes that Aang could well kill her father as long as he masters firebending. Power-hungry, she rearranges her priorities. If she helps Aang overthrow Ozai, she will take place as a more powerful leader, and so far it looks like Zuko is in no position of capturing the Avatar. She decides to help Aang at the promise that he not only overthrows her father, but kills him. This could make for an interesting turn of events in book three.
I know it's unlikely but if there's any chance of Azula teaching Aang, this would be it IMO.
