In the 100 years that the war was going on, there wasn't 1 other solar eclipse, because according to some almanacs, a solar eclipse happens every 3-7 years or so, so why didn't the EK Attack while they had that chance?

They didn't know fire benders lost their powers. Remember that the gaang found that out in the library. That was the whole point of going to Ba Sing Se, so they could tell the Earth King about the solar eclipse.

Perhaps they were reeling from the attacks. Sozens comet let them launch a huge preemptive strike at the other nations. Also, they could use non firebending soldiers.

unlike the other nations, the FN military is NOT completly reliant on their benders. Not only do they have a sizable portion of their army made up of well trained non-bending soldiers, but they also have advanced technology at their disposal...the tanks, catapults, the biggest navy in the world (take that water tribe), they also have their Rhino

Bumi probably didn't think he could win on his own being how the Earth King has no time for the war..well thanks to Long Feng and probably the guys before him.

the other nations arent either. The northern water tribe had the jerk's soldiers and sokkas dad, and the Earth Kingdom has rank in file soldiers as seen in Zuko alone.

This answer is simple: The Fire Nation probably didn't let that little tidbit of information get out that they lose their power on a solar eclipse. After the other 3 nations were weakened, they probably didn't want to risk a counter-attack so late in the game, and concentrated on individual survival instead of targeting the FN, or banding together. Now that the Earth Kingdom found a major weakness in the FN, they had a reason to go all-out.
