What convention exactly? And are you sure that's what they said? I still don't think Sokka gains the ability to bend, he's good as the only non-bending major character. And he would likely have discovered his ability along with Katara. What if Suki came back and was revealed to be a bender? That would turn the tides definitely. Maybe Suki IS Sokka's master *falls off chair laughing*

Someone at Comic-Con asked a question about bending abilities, whether or not they were inherited or learned, and how one gets good at them, to which Dante Basco replied "Practice.?? I practice a lot" or something like that.?? Then Mike and Bryan responded, and what they REALLY said was more like someone will develop their bending abilities... all that really means is that someone will get better at their bending, which we've already seen with several characters.?? In fact, they could've been referring to Toph, since she practiced and was able to use her abilities in a new way.?? (I don't remember the exact quote, but I did hear it myself in the Comic-Con Q & A tape that was on Youtube.)
